Ripened sheep's milk cheese coated with natural beeswax
“L’Alveare” is a cheese enveloped in a protective coating of beeswax.
This pecorino is matured with traditional natural methods and then, thanks to the able hands of our master cheesemakers, it is wrapped in a light cotton cloth and immersed in beeswax. Lastly it is tied in a radial pattern to complete and enhance its appearance.
The barrier effect of the wax allows the cheese to continue maturing without absorbing unpleasant odours or flavours.
It also maintains the internal moisture necessary to preserve and improve its qualities over a long period.
Once cut the cheese keeps a clean rind and its core will have a full smooth taste, with that hint of honey given by the wax that will delight your taste buds.
