Cow milk ricotta is a very fresh product produced exclusively in Romagna. It can be considered as real cheese precisely because it is made from whole cow milk and not whey.

It has a creamy velvety mouthfeel with a light delicate flavour. Its smooth pleasant taste and wholesomeness make it suitable for children.

Ricotta is excellent tasted just with a spoon but it is also suitable for preparing both sweet and savoury dishes. In Romagna it is used as a filler for crescioni (a typical stuffed flatbread having the shape of a half-moon) and for fresh pasta such as cappelletti and tortelli.
