Experimentation is a part of our philosophy. This is why we decided to continue our research with goat milk, a highly digestible product with different characteristics, especially from the nutritional viewpoint.

So to stimulate our customers, who are becoming increasingly expert and demanding, we produced a cheese with goat milk which gives a pleasing distinctive flavour particularly appreciated by those who are looking for products different to the classic cheeses.

This is how Il Rosone came into being. Its name is derived from the typical ribbed appearance which brings to mind the rose windows that can be seen in old gothic cathedrals.
