Large sheep's milk cheese ripened with ash
Once upon a time (In Italian C’era una volta) an old herdsman placed some cheese to mature amid some ashes and when he tasted it he noticed that the ashes had improved the maturing process, lending the cheeses an unusual tasty flavour and a rind which appeared different from all other cheeses.
We wanted to adopt this custom by maturing a large sheep milk cheese, which was already excellent, in ashes so that the maturing method would give it an "old" appearance and a flavour from past times.
So “C’era una volta” (Once upon a time) is the name of this cheese and since it is very distinctive and original it is available mainly during the Christmas period..
