The old cellars of Villa Corte are the place where the “Gran Cru di Grotta” is left to ripen in accordance with old methods.
It is a slow painstaking process which benefits from the microclimate and ambient conditions in these cellars to which we gave a new lease of life a few years ago.
It is here that expert hands supervise the maturing of the cheese, following step by step the delicate chemical and microbiological transformations that take place in a natural environment without any refrigeration technology.
Its typical rind and decisive intense flavour are due to the noble moulds that pervade the cellars undisturbed.
While maturing the cheeses are wrapped in a muslin specially produced to ensure their preservation.
